Easy, one day Sourdough Bread
200g sour dough (refreshed)
600g strong flour
350g water
13g salt
1 tsp honey
In a bowl mix the sour-dough with the water and the honey. Add 3/4 of the flour and mix well. Start kneading and then add the remaining flour with the salt. Knead well until you get an elastic dough.
Proof until doubled in size (6 to 8 hours). Then fold the dough like in the image below.
Rest the dough for an hour and then shape your loaf.
Proof for a couple of hours or until doubled in volume. Bake in a preheated oven at 250 C for 10 minutes and then 30 minutes at 200 C.
Remove it from the oven and cool it on a rack
