Working Mama Natural Yeast Bread - ready in the morning!
600 g strong flour
150g Refreshed Natural Yeast
350 - 400 g water
2 tsp salt
Preparation
Refresh your Natural Yeast ( 50% Hydration sour-dough starter) in the morning and then go to work.
On your return at 6 pm, make the dough. Start by dissolving the refreshed Natural yeast in 350g of water, then add the flour, only add the salt t the end. Depending on the flour you may want to add another 50g of water; work the dough until smooth and elastic.
Let it proof for about 3 to 4 hours. After an hour or so of proofing you may want to fold the dough; it is not essential but it makes the dough stronger and helps the proofing process.
Just before going to bed form your bread by patting the dough into a rectangle and then rolling it on itself tightly.
Put a rectangle of baking paper onto a flat tray, then place your bread in the middle of it. Sprinkle with some semolina, then place the tray with the bread on to in a large plastic bag which you will seal with a peg.
In the morning preheat your oven with you baking stone inside. After about 20 minutes take the baking stone out of the oven and slide baking paper and bread on top of the hot stone.
Bake at 240 C in a ventilated fan for 10 minutes, and then for another 30 minutes at 200 C in a static oven.
Get ready and go to work!
