Bread and Mozzarella Bake



Ingredients: 

500 g stale bread, sliced
2 mozzarelle
2 eggs
400g milk
3 tbsp parmesan
1 pinch salt
oregano

optional:
10 anchovy fillets
or
2 tbsp capers

Preparation


Whisk milk and eggs and a pinch of salt.

Cover the base of an oven dish (about 30x40cm) with a layer of bread slices, add half of the sliced mozzarella on top, sprinkle some oregano, and  if you like them some anchovy fillets or capers.

Add another layer of bread slices, the remaining mozzarella and sprinkle with oregano and grated parmesan.

Pour the milk and eggs mixture evenly over the dish.

Cover the dish with tin foil and bake for 15 minutes at 2220 degrees.  Remove the tin foil and bake for another 10 minutes or until golden.

If you have the time prepare the dish a few hours in advance of baking, so that the bread can have the time to  absorb the liquid.

Enjoy piping hot with a nice salad or a plate of soup.
