Nua Cake - Torta Nua

This is a great cake. Very easy and fast to make, it will surprise you with a very light sponge dotted with lovely drops of Italian Custard.

Custard:
1 egg yolk
300ml milk
75g sugar
40g all purpose flour
1tsp vanilla extract

Sponge:
150g sugar
3 eggs
75ml milk
225g self raising flour
100ml sunflower seeds oil 
peel of 1 orange


Start with the custard:

Add the ingredients in a pan, blend with a hand blender then gently stir with a wooden spatula until thickened.
Let the custard cool completely.  Italian custard, called crema pasticcera, is quite thick, not like the English one, which in fact we call crema Inglese.

Make the sponge:

Once the custard has completely cooled make the sponge.

In a mixer, bet the eggs, sugar,  milk and oil until light and fluffy.
Add the flour and orange peel to this mixture and beat well.
Pour into a 24 cm greased cake tins, then drop spoonfuls of the thick custard over the batter.

Bake  at 180C for 40 minutes. 

Serve once cooled.
