Sourdough Pancakes

Its Pancake Tuesday! And obviously for us is #sourdough Pancake Tuesday!

Try our tested recipe for sourdough pancakes:


50 g refreshed Sourdough Starter

3 tbsp water

3 tbsp milk

2 eggs

1 tsp sugar

65g 00 flour

½ tsp bicarbonate of soda

1 tsb cream of tartar

groundnut oil or butter for greasing

Dissolve the Sourdough Starter in the water and milk.

Add the eggs and whisk very well (you can use a hand blender)

Mix the flour with bicarbonate of soda and the cream of tartar and add to the liquid mix

Beat well until you have a smooth batter (you can use a hand blender at a low speed).

Heat one (or more –if you want to speed up the process) non-stick frying pan over a medium heat and add a knob of butter or some groundnut oil. In both cases, use a bit of kitchen paper to spread evenly and absorb the excess. When the pan is warm, add a ladle of batter in the middle of the pan without spreading it.

When the top of the pancake begins to bubble and the bottom part is golden brown, turn it over.

Cook until both sides should have a golden brown colour.

Repeat until all the batter is all finished.

Serve with maple syrup and/or a small knob or butter. You can also add some fruit for a healthier option.
