Easy Coconut Cake




100g all purpose flour
50g cornflour
3 tsp baking powder
150g grated coconut
150g sugar
100g sunflower oil
3 eggs
1 pot natural yogurt (125g)

for decorating:
1tbsp runny honey
2 tbsp grated coconut


Preheat oven at 180C static.

Beat the eggs,  sugar, oil and yogurt until smooth and well amalgamated.

Add flour, cornflour and baking powder together with the grated coconut and a little vanilla (seeds or extract).

Pour the batter in a buttered baking tin and bake at 180C for about 40 min.

Let the cake rest for about 10 minutes then brush it with the honey and sprinkle with the grated coconut.
