Easy Cranberries - Chocolate Chip Cookies




Cranberries Cookies

40 Butter
40 Sunflower Oil
100 g Light Brown Sugar
1 Egg
1 tsp Lemon Zest 
1 tbsp Lemon Juice
225g Plain Flour
½ tsp of Bicarbonate of Soda
1 tsp of Cream of Tartar

Mix butter, oil and sugar in a food processor until well combined.

Then add the egg and beat again until incorporated.

Mix the dry ingredients and add them to the wet mixture.
Pulse until all the flour is incorporated, then add 80g of Dried Cranberries (or any other dried fruit of your taste – you can also have 50% of fruit and 50% of white chocolate)
And pulse again 2 or 3 times.

With wet hands turn the dough into  small balls (the size of a walnut) and slightly press them with your fingers on a greased oven baking tray.

Bake at 180- 200 C for 15 mins or until nice and golden brown.


Choc chip cookies

40 Butter
40 Sunflower Oil
100 gr Light Brown Sugar

Add to a food processor and mix well then add

1 Egg
1 tsp Vanilla Extract 

Mix again then add

225g Plain Flour
½ tsp of Bicarbonate of Soda
1 tsp of Cream of Tartar

Pulse until all the flour is incorporated, then add
80 gr of Dark Chocolate Chips 
And pulse again 2 or 3 times.
With wet hands turn the dough into balls (size of a walnut or bigger if you like bigger cookies or you could even make a gigantic one!), and slightly press them with your fingers on a greased oven baking tray.
Cook at 180C for 15 mins or until nice and golden brown.
