Healthy Sourdough whole wheat Waffles or Pancakes
1⁄4 cup sourdough starter (50% hydration)
1⁄2 cup whole wheat flour
1⁄2 cup any whole grain flour ( we used a mix of spelt and rye flour)
1 cup water or 1 cup milk
1 egg
2 tablespoons oil (we used avocado oil), or 2 tablespoons butter
1⁄2 teaspoon salt
1⁄2 teaspoon baking powder or baking soda
Optional:
1 tbsp sugar
1 tsp vanilla extract
At night, in a planetary mixer or in a large bowl, dissolve the starter in the milk, then add the flour.
Cover bowl or the planetary mixer container with plastic wrap and let it rest overnight.
In the morning while you’re waiting for the waffle iron or pancake pan to heat up, mix the egg, oil,
salt, baking soda and sugar into the flour mixture.
Bake as pancakes or as waffles if you own a waffle maker.
