Vegetable Tagine Side Soup

Ingredients

-            2 Garlic cloves
-            2 red onions
-            2 cups of Courgettes diced
-            2 cups of Carrots diced
-            1 Red Pepper diced
-            1 Yellow Pepper diced
-            1 Celery stalk sliced
-            1 cup of Tomato passata
-            1 cup Chickpeas cooked
-            2 cups Red Lentils
-            1 Tbsp Cumin
-            1 Tbsp Cinnamon
-            1 Turmeric roots grated (or ½ tbsp ground Turmeric)
-            1 Red Chilli
Method
1.   Sauté onions and garlic in 1 tbsp of olive oil.
2.   Add the celery, spices and salt to taste and gently cook until the vegetable looks translucent.
3.   Add the carrots, red lentils and 1 cup of water and cook for 10 mins.
4.   Add the courgettes, red and yellow peppers, tomato ripe tomatoes and more hot water to cover all the vegetable.
5.   Cook for another 5 to 10 mins or until all the vegetables are tender.
