Nonna's polpettone - Italian easy meatloaf
Ingredients
500g lean beef mince
2 tbsp grated parmesan
1 slice of white bread soaked in milk
1 tbsp chopped parsley
1 egg
1 pinch of salt
200g Italian cooked ham
150 g cheddar or other cheese to taste
1 rectangular piece of baking paper

Method
Blend the slice of bread soaked in milk then mix it with the ground beef, egg, parsley and Parmesan in a large bowl until thoroughly combined; pat the mixture into a rectangle ( about 30x20 cm) on top of the baking paper.
Lay the ham slices on top of the meat, then position the cheese. With the help of the baking paper, roll the meat base to form a sausage with the ham and cheese at its centre.
Seal the baking paper with a twist at each end, as if you were wrapping a candy.
Bake meatloaf in the preheated oven at 200C until firm and no longer pink inside, roughly for half an hour.
