Minestrina in Brodo


Ingredients

500g beef brisket
2 carrots
1 yellow onion
2 celery stalks
1 bay leaf
3 whole peppercorns
salt
small pasta for minestrina


Method

Fill a large pan or better a pressure cooker with about 5 liters of water. Add a spoon of salt, the carrots, onion, celery, peppercorns and bring to the boil. Add the beef (when choosing the cut, make sure that it has some fat in it).

Boil for about 3 hours in a normal pan and 1 hour in a pressure cooker. The broth will be ready when the meat is completely cooked and falling apart. Drain the broth. Boiled meat can be served with boiled potatoes and some salsa verde.

Boil the desired amount of broth (depending on how you like your soup,   more broth than pasta, or vice-versa...) in a separate pan and add 25 g of pasta for each person. Boil until the pasta is ready (about 10 minutes). 

Serve very hot with a sprinkle of grated Parmesan cheese.
