Sweet and Sour Italian Zucchini - Agrodolce

 


INGREDIENTS


1 kg zucchini 

200g red onion 

1 cup sugar

1 cup vinegar 

1 cup extra virgin olive oil

1 tbsp salt

3 sage leaves

13 basil leaves

3 garlic cloves



METHOD


In a saucepan, combine the vinegar, sugar, oil, salt, sage, basil and garlic. Bring to the boil.


Cut the zucchini in your preferred shape and thinly slice the onion. 


Add to the boiling liquid and simmer for 10 minutes.


Cool and keep in the fridge in a glass covered container.
