Sardinian Vegetables Pizza
This is not a traditional pizza, nevertheless it tastes amazing and it is very quick to make. Feel free to add some fresh basil and parsley to the mix for an extra zing.
Ingredients
3 zucchini, 1 carrot, 15 cherry tomatoes, 1 onion, 30g parmesan cheese, 30g pecorino cheese, 30g olive oil, 1 pinch of salt, 300g fine semolina (semola rimacinata)
Method
Grate the zucchini and the carrot, chop the tomatoes and the onion.
Mix the vegetables in a bowl with the remaining ingredients, until you a soft dough is formed.
Line an oven tray with baking paper, spread a couple of tablespoon of olive oil and then distribute the dough in an even layer, with wet hands or the help of a spatula.
Drizzle with some more olive oil and sprinkle some rock salt on the top.
Bake in a preheated oven at 200C for 30 minutes, then for about 10 minutes at 250C, until golden and crunchy.
