Ingredients for regular energy balls:
20 soft Medjool dates, pits removed
1/2 cup almonds
1/2 cup cashews
1/2 cup cacao powder
1/4 cup hemp seeds
2 tbsp chia or flax seeds
2 tbsp nut butter (hazelnut, peanut, almond, etc.)
Shredded coconut to coat
For School proof snacks:
20 soft Medjool dates, pits removed
1/2 cup sunflowers seeds
1/2 cup pumpkin seeds
1/2 cup cacao powder
1/4 cup hemp seeds
2 tbsp chia or flax seeds
2 tbsp seeds butter ( we used http://www.rawhealth.uk.com/product-545-7.html)
Shredded coconut to coat
Grind the nuts in a food processor then add the rest of the ingredients.
If necessary add some cold water to achieve a dense paste consistency.
Roll the paste into balls, whatever size you prefer, we made ours quite small, with a 3 cm diameter.
Roll the balls into shredded coconut and then store them in an air tight container in the fridge.
If you are making these healthy snacks for your children lunch box, as nuts are not welcomed in school, you can substitute the nuts content with your favourite seeds and the nut butter with tahini (just make sure it does not contain peanut oil), or sunflower seeds butter.
Or if like me, you are allergic to chocolate, cocoa powder can be omitted.
