TwoMamas Fruit Cake
We had a slice of a similar cake in a coffee shop and then tried to recreate the recipe. This cake is amazing. You can tailor the filling to your preferences, just like we did!
My husband says this is not a fruit cake but we have not come up with a better name for it!
Pastry:
100g all purpose flour
100 g self raising flour
100g butter
50g sugar
1 egg
1/2 tsp salt
Filling:
125 g self raising flour
1 tbsp black treacle
1 cup dark brown sugar
1/2 cup soft pitted dates
1/2 cup nuts (Brazilian, walnuts, pecans, a mix of or whichever ones you prefer)
1 apple peeled and cored
50g butter
3 eggs
1 tsp ground cinnamon
1tsp ground ginger
1/4 tsp nutmeg
1tsp vanilla paste
First make the pastry. Mix the flours, sugar and salt. Add the cold butter and work it through until you reach a crumble. Add the egg and quickly bring the pastry together in a ball. Wrap it in cling film and reserve it in the fridge.
To make the filling start chop the nuts and the dates in a food processor. Add the apple and chop it until it is incorporated to the nuts and dates, but be sure to leave some texture into the mixture, you are not looking for a smooth paste.
Beat the butter and sugar together in a large bowl until slightly creamy. Add the eggs a little at a time, beating well between additions. Beat in the black treacle then add the nuts, dates and apple mixture, together with the spices.
Add the flour and blend until well combined.
Roll the pastry out on a lightly floured surface and use to line a 22 cm loose-bottomed tart tin. Pour the filling into the pastry.
Bake in a preheated oven at 180C for 50 minutes.
