This post will help you learn the basics to allow you to bake with a sourdough starter.

How to refresh and keep your starter

As soon as you receive your starter you should refresh it. The starter has to be refreshed every time you bake. At least 6 hours before baking, you will take your starter out of the fridge, then you will refresh it (weight the starter, add the same weight of white strong bread flour and half the weight in water; mix to a dough, reserve in a closed jar). The starter will be ready to be used once it will have tripled in volume. See the infographic below and the video on how to refresh your starter.

Always make sure that you have enough starter to use in your recipe and about 100g left to keep in the fridge. If you are not baking, still refresh your starter once every two weeks to keep it alive and healthy.
