Orange and Almonds Semolina Cake

Ingredients:

2 small oranges or 1 big
4 eggs
1 cup of vegetable oil ( avoid olive oil as the flavour is too strong; we recommend organic sunflower oil)
1 and 1/2 cups sugar
1 and 1/2 cups coarse semolina
1/2 cup ground almonds
2 tsp cream of tartar
1tsp bicarbonate of soda
1 pinch of salt

Method

Cut the oranges in four blitz them into pulp in a food processor.
Add eggs, sugar, oil, ground almonds, salt and mix until the liquid ingredients are well blended.
Add the rest of the ingredients and mix again. Bake in a preheated oven at 180C for 45 to 55  min
