Sourdough Easy Pita Bread
Ingredients:
275g strong white flour
100g sourdough starter
200g water
50g olive oil
6g salt
Method
Make the dough by kneading all the ingredients (minus the oil) in a free standing mixer.
Once the dough is strong and elastic add the oil and work again.
Divide the dough in 6 to 8 portions and shape them into a tight ball. Place the dough balls in an oiled tupperware and put them in the fridge for abut 12 hours (overnight will do). The dough keeps in the fridge for a couple of days.
In the morning, heat up the oven to 250C, with an oven tray placed in the middle rack.
Roll a couple of the balls into an oval shape, about 4 mm thick.
Slide them onto the hot tray.
Bake for about three to five minutes each, until they’ve puffed up like a pillow and are barely coloured.
