OPTION 1: MAKE AND BAKE IN THE BREAD MACHINE

In the bread pan place 100g of Natural Yeast, 100g of strong bread flour and 80g of cold water. Start the ‘dough’ programme (in some bread machines is called the pizza programme).
Making Natural Yeast Bread With A Bread Machine
When the ‘dough’ programme finishes (it takes approximately 45mins), add in the ingredients in the following order:
400g strong flour
1 tsp of honey
1 level tsp salt and
200 ml cool water
Set the bread machine for the programme with the longest rising time (in some bread machines this is the programme for French bread - a 6 hour cycle).
Set the delay timer for an additional 7 hours.
After approx. 45 mins + 6 hours + 7 hours = approx 14hrs your bread is ready.
Take the bread out of the pan and let it cool on a rack.
OPTION 2: MAKE DOUGH IN THE BREAD MACHINE AND BAKE BREAD IN THE OVEN
If you prefer to make the bread dough in a bread machine and bake your bread in the oven follow this procedure instead:

Making Natural Yeast Bread With A Bread Machine and Baking it in the Oven
When the ‘dough’ programme finishes usually 45mins, add in the following order:
400g strong flour
1 tsp of honey
1 level tsp salt
200 ml cool water
Set the machine for the ‘dough’ programme (in some bread machines is called pizza programme – 45mins or so).
Set the delay timer for an additional 7 hours.
When the programme is finished let the dough rest for an additional 2 hours.
After approx. 45 mins + 45 mins hours + 7 hours = approx 8.5hrs your dough is ready.
From this point onwards, follow the instructions given for hand kneaded bread.
