Pudim de Leite - Brazilian Crème Caramel

Yesterday I bought a can of condensed milk, used very little for a recipe and then... well what could I do with it? Pudim de Leite came to mind, a desert from Brazil, where I lived as a teenager.


Here it goes:

1 can of condensed milk ( 400g)
1 can of milk (first you empty the condensed milk can into your mixing bowl and then fill the can again with milk)
3 tbsp of sugar
3 eggs


mix all the ingredients with a hand held blender. This is a fast no pain recipe, so I just took 6 ramekins, put 1 tablespoon of sugar and 1 tablespoon of water in each of them and put them in the microwave for 3 minutes to make the caramel. If your caramel is not ready in 3 minutes just cook it a big longer in the microwave but keep an eye on it as it can burn very easily. Once the caramel is cold, fill the ramekins with the Pudim mixture.
Put the ramekins in a baking tray, fill it half way with boiling water and then bake in a preheated oven at 140C  for about 30 - 40  minutes depending on the size of your mould ( check them they should be solid and a bit brown ).
Once cooled store them in the fridge. Best eaten the day after.
