Homemade Italian Broth - Ideal for Tortellini in Brodo or to make Risotto
3 l boiling water
400 g boiling beef or shin of beef
1 carrot
2 celery stalks
1 big onion
4 whole black peppercorns
2 garlic cloves
2 tbsp sea salt
2 bay leaves
Preparation
Pour the water in a pot, or pressure cooker, and bring to the boil.
Add salt, pepper, carrot, celery stalks, onion, bay leaves and garlic cloves.
Once the water boils again, add the beef of choice.
Cook for about 1 hour in a pressure cooker and a for about 3 in a normal pot.
This recipe makes a clear broth, the one in Italy we would cook for Tortellini in brodo or to make risotto.
The meat can be eaten as bollito, with some bagnetto verde or tomato ketchup.
Once completely cold the beef can be shredded into thin stripes and added to a green salad with some parmesan shavings on the top.
