Magic Chocolate Cake




Ingredients:

65 g plain flour
125 g butter
500 ml milk
1 pinch of salt
1/2 tsp vanilla paste
50 g cocoa powder
1 tbsp water
4 eggs
150 g sugar

Preparation


First melt the butter and then let it cool completely.  

Preheat the oven to 160 C. Lightly butter or line with baking paper a 20 by 20 cm baking dish.

Melt the butter and set aside to slightly cool. Warm the milk to lukewarm and set aside.

In a separate bowl, whisk together the flour and cocoa powder Set aside.
Whip the egg whites with a pinch of salt to stiff peaks. Set aside.

Beat the egg yolks and sugar until light. Beat in the melted butter, vanilla paste for about 2 minutes or until evenly incorporated.

Mix in the flour/cocoa into the batter until evenly incorporated. Gently whisk/beat in the milk until everything is well mixed.
Fold/gently-whip in the egg whites, 1/3 at a time. Repeat until all of the egg whites are folded in.

Pour the batter into the prepared pan and bake for 60 minutes, then switch the oven off and leave the cake inside for another 10 minutes, with the oven door slightly opened.

Allow cake to completely cool before cutting and then dust with confectioner’s sugar.
