Italian Meatballs with Zibaldone
This is a simple but very tasty recipe for meatballs. They can be served with a salad or mashed potatoes and the left overs can be added to a simple tomato sauce for a great pasta sauce.
Ingredients:
1 onion
finely chopped
2 small cold boiled potatoes, mashed
250gr minced beef
250gr minced pork
1 egg
1/2 cup milk
1/2 cup water
1/4 cup breadcrumbs
2 tbsp extra virgin olive oil
salt
1 tsp Zibaldone
Procedure
Chop the onion then slow fry in a tsp of olive oil until golden; remove it from the pan and let it cool.
Mix together the onion, mashed potatoes ( ideally pass them through a ricer), minced beef and pork, egg, milk, water breadcrumbs, salt and zibaldone
Using your hands roll into relatively large, round balls and then flour them lightly.
Heat a frying pan over a medium heat and add the olive oil. Once hot, fry the meatballs on all sides until nicely coloured, being careful not to burn them. You may need to do this in batches.
Serve the meatballs with freshly boiled potatoes or fries.
